Miang Yak


Ingredients
Young ginger, shallots, dried shrimps, roasted peanuts, lime, fried crisped pork fat, shrimp paste, palm sugar, hot chilies, coral tree leaves, betel, and young leaves of rose apple.
Preparation
Same as Miang Pla Tu, but use crisped pork fat instead of Mackerel. Shrimp paste is a dipping for crisped pork fat. If preferred, the sour, salty, and sweet flavor can be obtained by mixing palm sugar with shrimp paste. The result is a sticky dip for crisped pork fat. Do not put it on heat. Just add a pinch of sugar and shrimp paste. This dip is needed to be quite sticky. Miang Yak is a very delicious recipe. It is completely soft when you chew it. All people in the palace like Miang Yak. It is not an exclusive food for members of royal family, but for ordinary persons. It is just irresistible and unstoppable eating it. If not yet believed, you have to try it. Crisped pork fat is essentially prepared from hard pork fat chopped in bite sizes then fried until it loses all the fat.
